Marquise Recipe

  • 8 egg yolks
  • 180g caster sugar
  • 250g butter, coarsely chopped
  • 200g dark choc
  • 80g Dutch cocoa powder
  • 600ml pouring cream, whisked to soft peaks


  • Whisk egg yolks and sugar until pale and fluffy
  • Transfer to heatproof bowl and whisk over saucepan of boiling water until warm and thick
  • Melt butter and chocolate in separate heatproof bowl over water, add cocoa and stir.
  • Fold a third of yolk mixture into chocolate, fold remaining yolk mixture into chocolate and set aside to cool for 10mins
  • Fold in whipped cream in batches until just combined
